Yogurt Chicken Tikka Skewers
Chicken cubes marinated in spiced yogurt, grilled on skewers and served with quinoa and a fresh salad.

Marinate in the morning and the chicken turns out juicy and well spiced by dinner.
Ingredients
- Chicken breast, raw, cubed4 breasts
- Low-fat plain yogurt2/3 cup
- Garlic3 cloves, minced
- Fresh ginger1 tbsp, grated
- Ground cumin2 tsp
- Ground coriander1 tsp
- Ground turmeric1 tsp
- Paprika2 tsp
- Lemon juice2 tbsp
- Olive oil1 tbsp
- Cherry tomatoes1 1/2 cups
- Cucumber1/2 large
- Red onion1 small
- Fresh cilantro1/4 cup
- Quinoa, cooked2 cups
- Salt1 tsp
Steps
- Mix the yogurt, garlic, ginger, cumin, coriander, turmeric, paprika, half the lemon juice and salt. Add the chicken and coat well. Marinate 30 minutes or up to overnight.
- Soak wooden skewers in water for 20 minutes, then thread the chicken onto them with half of the tomatoes.
- Grill or broil on medium-high heat for 15 to 18 minutes, turning, until browned and cooked through.
- Dice the cucumber, onion and remaining tomatoes. Toss with the oil, remaining lemon juice and cilantro.
- Serve the skewers over the quinoa with the salad on the side.
