Yellow Moong Dal with Rice

Moong dal cooks quickly and needs no soaking, which makes this a good weeknight dal.

Ingredients

  • Split yellow moong dal1 cup
  • Onion, chopped1 medium
  • Tomato, chopped1 large
  • Olive oil1 tbsp
  • Cumin seeds1 tsp
  • Garlic4 cloves
  • Fresh ginger, grated1 tsp
  • Green chilies2
  • Ground turmeric1/2 tsp
  • Lemon juice1 tbsp
  • Fresh cilantro1/4 cup
  • Cooked brown rice2 cups
  • Saltto taste
  • Garam masala1 tsp

Steps

  1. Rinse the dal and simmer it with the onion, tomato, turmeric, salt and 3 1/2 cups of water until soft, about 20 minutes, or pressure cook for 3 whistles.
  2. Mash the dal lightly with a whisk. Add hot water for a pourable consistency.
  3. Heat the oil, crackle the cumin, then add sliced garlic, ginger and green chilies until golden.
  4. Pour the tempering into the dal with garam masala and simmer for 2 minutes.
  5. Finish with lemon juice and cilantro, and serve with brown rice.
