Vegetable Rava Upma
South Indian semolina porridge with carrot, peas and roasted peanuts.

Dry roasting the semolina first keeps the upma fluffy rather than sticky.
Ingredients
- Semolina (rava)2/3 cup
- Canola oil1 tbsp
- Cumin seeds1 tsp
- Onion, chopped1/2 medium
- Carrot, finely diced1 small
- Green peas1/3 cup
- Green chili, slit1 small
- Fresh ginger, grated1 tsp
- Dry-roasted peanuts2 tbsp
- Lemon wedge1/4 lemon
- Fresh cilantro, chopped2 tbsp
- Saltto taste
- Water, hot2 cups
Steps
- Toast the semolina in a dry pan over medium heat for 3 to 4 minutes until it smells nutty. Set aside.
- Heat the oil, add the cumin, then the onion, chili and ginger. Cook until soft.
- Add the carrot and peas and cook 2 minutes.
- Pour in the hot water and salt and bring to a boil.
- Lower the heat, stream in the semolina while stirring, and cook covered for 2 minutes.
- Stir in the peanuts, squeeze over the lemon and top with cilantro.
