Turkey and Black Bean Taco Skillet
A one-pan meal of ground turkey, rice, black beans and peppers in taco spices.

Ingredients
- Ground turkey, 93% lean, raw1 lb
- White rice, long-grain, raw3/4 cup
- Black beans, cooked1 1/2 cups
- Red bell pepper, diced1 1/2 cups
- Green bell pepper, diced1 1/2 cups
- Onion1 cup, diced
- Fire-roasted or diced tomatoes, cooked1 cup
- Olive oil1 tbsp
- Garlic2 cloves
- Paprika2 tsp
- Ground cumin2 tsp
- Dried oregano1 tsp
- Fresh cilantro1/4 cup
- Low-sodium broth1 1/2 cups
- Saltto taste
Steps
- Heat the oil in a large deep skillet. Cook the turkey with the onion for 6 minutes until browned.
- Stir in the garlic, paprika, cumin, oregano and salt.
- Add the rice, peppers, beans, tomatoes and broth. Bring to a boil.
- Cover and simmer on low for 18 to 20 minutes until the rice is tender and the liquid is absorbed.
- Rest 5 minutes, then top with cilantro.
