Tilapia Veracruz
Mexican-style tilapia simmered in a tomato sauce with olives, jalapeno and lime, served with rice.

Ingredients
- Tilapia fillets, raw4 fillets
- Olive oil2 tbsp
- Onion1 medium, sliced
- Garlic3 cloves, minced
- Ripe tomatoes, chopped4 medium
- Green olives, sliced1/4 cup
- Jalapeno1, sliced
- Limes1, juiced
- Dried oregano1 tsp
- Fresh cilantro1/4 cup
- White rice, cooked2 cups
- Capers1 tbsp
- Bay leaf1
- Salt and pepperto taste
Steps
- Heat the oil in a wide skillet and cook the onion for 4 minutes. Add the garlic for 1 minute.
- Add the tomatoes, bay leaf, oregano, jalapeno, olives and capers. Simmer 10 minutes until saucy.
- Season the tilapia with salt and pepper and nestle it into the sauce.
- Cover and cook 5 to 6 minutes until the fish flakes.
- Finish with the lime juice and cilantro. Serve with the rice.
