Hearty Split Pea Soup
Thick green split pea soup with carrot and celery, flavored with bay and thyme and nothing from a carton.

Split peas need no soaking and break down into a thick soup. A splash of lemon at the end brightens it.
Ingredients
- Green split peas, dry1 1/4 cups
- Onion1 medium
- Carrots2 medium
- Celery3 stalks
- Garlic3 cloves
- Olive oil1 tbsp
- Water7 cups
- Lemon juice1 tbsp
- Bay leaf1
- Dried thyme1 tsp
- Salt and pepperto taste
Steps
- Cook the diced onion, carrots and celery in the oil for 8 minutes.
- Add the garlic, rinsed split peas, water, bay leaf and thyme.
- Simmer, partly covered, for 50 to 60 minutes, stirring now and then, until the peas collapse.
- Remove the bay leaf and blend part of the soup for a creamy texture.
- Season and finish with lemon juice.
