Brown lentils and rice topped with deeply caramelized onions, a Middle Eastern staple.

Take your time with the onions. The sweet, dark strands are the whole point.
Ingredients
- Brown lentils, dry1 cup
- Long-grain brown rice, dry3/4 cup
- Onions, thinly sliced3 large
- Olive oil2 tbsp
- Cumin seeds1 tsp
- Ground cinnamon1/2 tsp
- Plain low-fat yogurt1 cup
- Cucumber, diced1 cup
- Fresh parsley1/4 cup
- Saltto taste
Steps
- Cook the onions in the oil over medium heat for 25 to 30 minutes, stirring often, until deep brown. Take out about a third for topping.
- Add cumin, cinnamon and the lentils with 3 cups of water to the pot. Simmer covered for 15 minutes.
- Stir in the rice and 1 cup more water. Cover and cook on low for 30 minutes until both are tender.
- Season with salt and let it stand 5 minutes.
- Top with the saved onions and parsley, and serve with yogurt and cucumber.
