Moong Dal Chilla
Thin savory lentil pancakes with onion, tomato and ginger, served with a spoon of yogurt.

Soaked mung beans blend into a smooth batter that cooks into crisp, golden pancakes. Whole beans keep the fiber high.
Ingredients
- Whole mung beans (moong), dry2/3 cup
- Onion, finely chopped1/4 cup
- Tomato, finely chopped1/2 medium
- Green chili1 small
- Fresh ginger1 inch piece
- Cumin seeds1 tsp
- Fresh cilantro, chopped2 tbsp
- Canola oil1 tbsp
- Plain low-fat yogurt, to serve1/2 cup
- Saltto taste
- Wateras needed
Steps
- Soak the mung beans in water for 4 hours, then drain.
- Blend the beans with the chili, ginger, cumin, salt and about 3/4 cup water into a pourable batter.
- Stir in the onion, tomato and cilantro.
- Heat a nonstick pan over medium heat and brush lightly with oil.
- Pour a ladle of batter and spread it thin. Cook 2 to 3 minutes, flip, and cook another minute until golden.
- Repeat with the remaining batter and serve with the yogurt.
