Masoor Dal Chilla
Soft red lentil pancakes with ginger, green chili and a little spinach.

Red lentils need only a short soak, so this batter comes together fast. The spinach disappears into the pancake.
Ingredients
- Red lentils (masoor dal), dry2/3 cup
- Fresh ginger1 inch piece
- Green chili1 small
- Baby spinach, chopped1 cup
- Onion, finely chopped3 tbsp
- Fresh cilantro, chopped2 tbsp
- Canola oil2 tsp
- Saltto taste
- Waterabout 3/4 cup
Steps
- Rinse the lentils and soak in water for 2 hours, then drain.
- Blend with the ginger, chili, salt and water into a smooth batter.
- Stir in the spinach, onion and cilantro.
- Heat a nonstick pan over medium heat and add a few drops of oil.
- Spread a ladle of batter into a thin round and cook 2 to 3 minutes per side until browned in spots.
- Finish the remaining batter and eat while hot.
