Lean Beef and Broccoli with Rice
Thin strips of sirloin and tender broccoli in a ginger-garlic sauce, with white rice.

Slicing the beef thin and against the grain keeps it tender in under ten minutes of cooking.
Ingredients
- Beef strip steak or sirloin, raw, thinly sliced1 lb
- Broccoli florets4 cups
- Canola oil2 tbsp
- Toasted sesame oil1 tsp
- Garlic2 cloves, minced
- Fresh ginger2 tsp, minced
- Scallions3, sliced
- White rice, long-grain, raw1 cup
- Low-sodium soy sauce3 tbsp
- Cornstarch2 tsp
- Red pepper flakes1/2 tsp
- Water1/2 cup
Steps
- Cook the rice according to the package.
- Toss the beef with the sesame oil, 1 tsp cornstarch and 1 tbsp of the soy sauce.
- Whisk the remaining soy sauce, remaining cornstarch, garlic, ginger and the water.
- Heat 1 tbsp canola oil in a large skillet over high heat. Sear the beef in a single layer for 1 to 2 minutes per side, then move to a plate.
- Add the remaining oil, broccoli and a splash of water. Cover and steam 3 minutes.
- Return the beef, pour in the sauce and stir until thickened. Top with scallions and pepper flakes and serve over the rice.
