Gobi Matar
Cauliflower and green peas in a spiced onion and tomato masala, served with brown rice.

A quick North Indian sabzi. Peas add sweetness and a little protein, and chickpeas make it filling enough for a main.
Ingredients
- Cauliflower florets1 large head
- Green peas1 cup
- Chickpeas, cooked or canned and drained1 can
- Canola oil1 1/2 tbsp
- Onion, chopped1 medium
- Tomatoes, chopped2 medium
- Garlic3 cloves
- Fresh ginger, grated1 tbsp
- Green chili1
- Cumin seeds1 tsp
- Ground turmeric1/2 tsp
- Ground coriander1 tsp
- Garam masala1 tsp
- Fresh cilantro1/4 cup
- Cooked brown rice2 cups
- Saltto taste
- Red chili powder1/2 tsp
Steps
- Heat the oil and crackle the cumin seeds. Add the onion, garlic, ginger and chili and cook until golden.
- Stir in the tomatoes, turmeric, coriander, chili powder and salt and cook until soft.
- Add the cauliflower and a splash of water. Cover and cook for 8 minutes.
- Add the peas and chickpeas and cook uncovered for 6 minutes, until the cauliflower is just tender.
- Finish with garam masala and cilantro and serve over brown rice.
