Ginger Sesame Salmon with Green Beans
Pan-roasted salmon and crisp green beans with ginger, garlic and a touch of sesame, served on brown rice.

Ingredients
- Salmon fillets, raw2 fillets
- Green beans, trimmed3 cups
- Olive oil1 tbsp
- Toasted sesame oil1 tsp
- Fresh ginger1 tbsp, grated
- Garlic2 cloves, minced
- Lemon juice1 tbsp
- Sesame seeds1 tsp
- Brown rice, cooked1 cup
- Low-sodium soy sauce1 tbsp
Steps
- Heat the olive oil in a nonstick skillet over medium-high heat. Cook the green beans for 6 to 7 minutes until blistered, then move them to one side.
- Add the salmon to the pan and sear 4 minutes per side.
- Stir together the soy sauce, sesame oil, ginger, garlic and lemon juice. Pour it over the fish and beans and cook 1 minute.
- Serve over the rice and sprinkle with sesame seeds.
