Ginger Garlic Shrimp and Broccoli Stir-Fry
Seared shrimp and bright broccoli in a light ginger sauce, served over brown rice.

Ingredients
- Medium shrimp, raw, peeled1 1/4 lb
- Broccoli florets3 cups
- Olive oil2 tbsp
- Fresh ginger2 tsp, grated
- Garlic2 cloves, minced
- Brown rice, cooked2 cups
- Low-sodium vegetable broth1/4 cup
- Rice vinegar2 tbsp
- Low-sodium soy sauce1 1/2 tbsp
- Cornstarch1 tbsp
Steps
- Whisk the broth, vinegar, soy sauce and cornstarch in a small bowl.
- Heat half the oil in a large skillet over medium-high heat. Sear the shrimp for 2 to 3 minutes per side until pink, then move to a plate.
- Add the rest of the oil, the broccoli and 2 tbsp water. Cook, stirring, for 4 minutes until crisp-tender.
- Stir in the ginger and garlic for 30 seconds.
- Pour in the sauce and return the shrimp. Cook for 1 to 2 minutes until glossy and thick, then serve over the rice.
