Fakes Greek Lentil Soup
A thick, tomatoey brown lentil soup with a good pour of olive oil and a splash of vinegar.

The traditional finish is a spoonful of red wine vinegar in each bowl. It lifts the whole pot.
Ingredients
- Brown lentils, dry1 1/4 cups
- Onion1 medium
- Carrots1 large
- Celery2 stalks
- Garlic3 cloves
- Ripe tomatoes, grated or chopped2 medium
- Extra virgin olive oil3 tbsp
- Red wine vinegar1 tbsp
- Fresh parsley1/4 cup
- Water8 cups
- Bay leaf1
- Salt and pepperto taste
Steps
- Rinse the lentils, cover with water, bring to a boil for 2 minutes and drain.
- Return the lentils to the pot with the water, onion, carrots, celery, garlic, tomatoes and bay leaf.
- Simmer, covered, for 25 minutes, then add half the olive oil, salt and pepper.
- Cook another 25 to 30 minutes until the soup is thick.
- Stir in the remaining oil, vinegar and parsley before serving.
